1.0                               BACKGROUND AND OBJECTIVES

 The study cassava tubers are one of those agricultural products that can be cultivated in any part of the country. This is possible because they grow in relatively poor soil and in low rainfall areas. Nigeria remains the largest producer of cassava in the world. Cassava can be processed into chips, garri, flour fufu and livestock feeds for animal consumption.

The market  demand for cassava derivatives is increasing by the day especially in the Garri and flour processing industries, where the government policy of making composite bread flour mandatory to all bakers in Nigeria, combining 10% of um-fermented cassava flour with 90% wheat flour since January 2005, has created valued at over twenty-eight billion Naira.

Objectives of these Garri Processing Establishment includes:

1.         Maximize cross-fertilization among Nigeria Government Agricultural policy project (Loan and grants) in the area of cassava processing and marketing

2.         Develop new markets, both for existing and new cassava products.

To achieve these goals, this garri industry has envisaged the implementation of a set of actions meant to;

2.         Identify the best processing and marketing technologies and good practices for both raw and processed cassava roots within and beyond the region, and to adapt them to local conditions,

3.0       PROPOSED LOCATION

            This Garri industry shall be located at Ezzamgbo, in Ebonyi State Nigeria. This is because the community is the largest producer of cassava tubers in the state. This is aimed at getting the raw material at a lower cost. Other factors to be considered in setting up a food processing industry are also obtainable in the region. This will go a long way in growing the industry to a standard in a little space of time.

4.0       PRODUCTION PLANT: MAIN DETAILS

            The plant is designed to process cassava and produce pre-cooked, sterilized garri to be vacuum-packed in 1kg plastic pouches. The main parameters of the target processing unit are summarized here below:

1.         Intake of raw material (cassava root): 3000kg/day (2 shifts of 8 hours/day).

2.         Out take of final product: 2000kg/day of garri in 1kg plastic pouches;

3.         Production capacity of the garrifying and packaging line; 200kg/h.

5.0       MAIN FEATURES OF THE RAW MATERIAL TO BE USED IN

THE PILOT PLANT:

6.0       FEATURES OF THE FINAL PRODUCT

7.0       DESCRIPTION OF THE GARRI PROCESSING PLANT

The proposed production unit includes a reception hall were raw materials are delivered in bulk, weighed, cleaned and then stored in wooden boxes to be later taken to the processing area. The proposed plant was conceived to include the following;

1.         Raw cassava reception/cleaning and storage area.

2.         Cassava peeling/washing hall

3.         Cassava grating/bagging/pressing area

4.         Cassava garrifying

5.         Packing, weighing, labeling and storage area of the end products.

6.         One laboratory

7.         One workshop for equipment maintenance

8.         One room for storing packaging materials

9.         Utilities room

8.0       Description of the processing operations

*          Cassava Reception

Cassava roots are delivered bulk inside the reception hall. After being weighed, cassava root are manually cleaned by means of brushes and put on wooden boxes for storage before being further processed.

*          Cassava peeling and washing

Cassava roots are transferred to the peeling are where they are manually peeled and washed 

Cassava Grating:

Peeled cassava is grated into mash by means of a grating machine.

Fermentation

Cassava semi-dry mash is allowed to ferment by placing it at wooden pallets for about 6-8 hours.

Sieving

The fermented mash is sieve using a mechanic deck sieve.

Garrifying

The dry mash is fried using iron pan.

Packaging

Garri is then manually put inside a 1kg plastic paunch that is welded through a vacuum bell packaging machine.

Labeling and storage

At the end of packaging, the 1kg pouches are weighed and labeled. Packed in carton of 10kg and stored before their final delivery to customers.
